This Week’s Menu Plan: The We’re On Vacation Edition

We drove to Arkansas yesterday afternoon to spend a few days on the lake with my extended family. This is our annual get-together and it’s something everyone looks forward to each year.

We share all our meals together and cook/bake all the food in the kitchen in my parent’s cabin, taking turns helping with the meals and clean up for each meal. My parents provide a lot of the food and the rest of us pitch in by bringing what extras we already have on hand (we’re all couponers so we typically raid our pantries and incorporate the excess items into the menu plan for the week!).

Since everyone splits up the cooking and clean up duties, it makes mealtime pretty simple to pull off and keeps it a laid back week for all of us. This not only saves a lot of money, but it gives us more time to spend enjoying the lake and a break from the normal busyness of life.

Since I’m not in charge of planning the menu, I’m not exactly sure what all is on the menu this week. So far, we’ve done spaghetti (last night’s dinner) and hamburgers (tonight’s dinner). Breakfast was French Toast, bacon and eggs, smoothies, and juice this morning. Lunches have been sandwiches both days.

We have somewhat of a plan for the rest of the week, but we’ll also wing it some and probably create some new recipe creations using odds and ends of things we brought, too.

This Week’s Menu Plan

Blueberry Banana Smoothie

We made it through our busy week last week and are looking forward to a bit more of a relaxed week this week. We are hosting another smaller baby shower tomorrow for my sister, but I’m just providing the home to have it at and my sister-in-law and sisters are doing all the prep work. So it should be pretty simple for me to pull off — especially since my house is already clean from last week’s shower!

Oh and did anyone notice I completely skipped posting about last week’s Freezer Cooking session? Um, that would be because I didn’t get it done. When my to-do list started becoming a little overwhelming on Thursday, I decided that was something that just get skipped since we still had some meals in the freezer. But I promise I’ll do my best to actually follow through with freezer cooking and posting about it this week!

My sister and her husband and children are in town this week, so that means there will be a lot of family get-togethers and meals shared together. Which means we probably won’t follow this plan, but we at least have a plan:

This Week’s Menu Plan

I didn’t get last week’s Freezer Cooking in an Hour post written on Thursday like I’d planned (it was just one of those weeks where I was behind on pretty much everything all week long!), but I did make the Bread Machine Bread Sticks, Lemon Garlic Marinated Chicken, and All Natural No Bake Energy Bites (as evidenced from the photo above).

We didn’t love the Lemon Garlic Chicken, but the Bread Machine Bread Sticks were a BIG hit (notice that half of them are already missing from the picture above?) and I’ll definitely be making them again. The No Bake Energy Bites also went over well and the children had a blast helping me roll the balls.

We’re still experiencing pretty high temperatures, but it’s supposed to cool down later in the week, so I’m hopeful it will be cool enough for me to use the oven a little more. We’ll see!

This Week’s Menu Plan

We didn’t completely follow our menu last week because I was sick. I’m so grateful we had food in our freezer — it was a huge blessing when I didn’t feel like cooking. I’m finally on the mend and feeling more like myself again (thank you, God!).

It has been SO hot here — it was 111 degrees on Sunday! — so I’m not doing much cooking or baking in order to keep the house cooler. In fact, I’m hoping to only turn on the oven once or twice this week. Otherwise, we’re using the crock pot, grill, microwave, or eating something that doesn’t need to be heated.

Watermelon Frosties

Jesse’s had a really heavy case load at his law firm recently so he’s been working a lot of extra hours the last few weeks. So we were so happy to have him home over the fourth of July weekend. We slept in and just enjoyed relaxing family time for three whole days. It was so nice — and we were was sad when the extended weekend was over. Now it’s back to real-life again!
