For several years now, I have been buying almost all of my chicken, ground beef, and ground turkey from Zaycon. It’s no secret I’m in love with their quality meat and affordable prices!

This is my first time purchasing their Premium Hickory Smoked Bacon, and it is fantastic! I’ve been wanting to “splurge” on buying their bacon for awhile, but I’ve been waiting to save up enough referral credits. It did not disappoint! 🙂 It comes frozen in 12 3-lb packages, which makes it super easy to throw in the freezer with no packaging work on my end. We love the hickory flavor of the thick-cut slices.

A Week of Gratitude (Week 2)

What I'm Thankful For

It’s November and I’m counting my blessings as part of the 12 Months to a Healthier You Challenge. Here are some of my blessings from this past week:

1. Strength and stamina after five days of being on the road to have clarity for a filming project I did with Focus on the Family.

2. 5 people who spent a lot of time and effort to critique my manuscript and give me feedback before I turn it into the publisher December 1.

What I'm Thankful For

3. 6 days, 6 flights, 3 hotels, 2 conferences, 3 presentations, 1 filming, countless conversations, and dozens of God-moments. This tired mama is thrilled to be finally home again with her babes and sleeping in her own bed again!

4. Finally getting our ceiling/bathroom leak problem fixed! It took multiple plumbers and a lot more time than we initially assumed it would take, but we are so grateful to have things in working order again and our ceiling all patched back up and painted.

5. My mom’s faithful prayers for me. She’s constantly texting and emailing me to let me know specific things she’s praying for me and it’s been such a blessing — especially the past two weeks as there’s been a lot going on in our family.

6. Playing LEGOS with my kids. (If your kids love Legos, be sure to search on YouTube for Puzzle Box tutorials — my kids get such great engineering practice and problem solving skills by designing and building these.)

7. My dear friend, Tam. After a long week for both of us, we got together for an hour and half on Saturday just to chat and encourage one another. It’s always a gift to have people you can share your hearts to openly with.

8. The love that my children have for each other. See a video Silas made for Kathrynne while she was at her swim meet here.

9. SLEEP! So very thankful to have time this weekend and the past few days to get caught back up on sleep. It’s amazing the difference being well rested can make!

10. After months of research, discussion, more research, talking with other companies, exploring options, and yes, some pulling our hair out moments, finally landing upon a solution for our email lists. So grateful for some direction and resolution after a year of working on this project!

What I'm Thankful For

11. A quick day trip to Atlanta and back to meet with an amazing group of designers, creatives, marketing brains, retail sales folks, and publicists and map out the details of the product line that we’re launching in 2015. I cannot wait to share more details… I had to hold in my squeals of excitement all that day! You are going to LOVE what we are cooking up! I’m still pinching myself that I get to be apart of all of this!!!

12. Our dear friend, Susanna, flying out from Kansas to stay with us for a few days. She’s been like an angel in our home — playing with our kids, helping with laundry, cooking, and just bringing so much blessing and peace into our home. It’s truly been a gift to our family.

13. An impromptu date night with Jesse! Since Susanna was here, she graciously watched our kids while we went out for dinner, conversation, and a movie. It was so fun to do something like this… especially spur-of-the-moment!

A Week of Gratitude (Week 1)

Blessings This WeekAnother blessing: beautiful snow while we’ve been in Colorado the past two days!

It’s November and I’m counting my blessings as part of the 12 Months to a Healthier You Challenge. Here are some of my blessings from this past week:

1. Getting to watch Kaitlynn perform her ice skating competition routine. (So proud of how hard she is working! See a video of her practicing here.)

2. Watching Kathrynne’s swim meet and seeing her confidence blossoming.

3. The love from my children… when I was feeling tired one evening, they all surrounded me and just loved on me.

4. Snuggling with Silas. That boy blesses his mama so much!

5. Turning in my manuscript to a group of friends who are critiquing it! So thrilled to have it be so close to being able to turn into the publisher.

What I'm Thankful For This Week

6. Getting to spend time with some of my dearest friends at The Platform Conference.

7. A group of some of my very closest friends gathering one evening and pouring out our hearts in prayer together… such a beautiful thing.

9. Facing a big fear in my life & punching it right in the face. (See picture proof & read more here.) Also, I’m so, so grateful for my manager and friend, Brian, being willing to spend over two hours helping me prep/organize for the talk and my slides the day before I gave it. I was feeling like it just wasn’t coming together and he jumped in and made it so much better than I could have ever done on my own.

10. My sister-in-law and brother-in-law graciously watching our children so Jesse and I could spend a few days together — at the Platform Conference and doing some filming with Focus on the Family.

11. Jesse being so kind to run out at 9 p.m. tonight to find a shirt to go under my jacket for the FOTF filming — after we realized that I didn’t pack anything that met their request for no black/no patterns. Note to self: always carefully read film shoot clothes requirements when packing, not the night before the filming when you are far from home. Oops!)

12. The encouragement of so, so many people this past week as I carried some heavy burdens. If you were one of those people, thank you from the bottom of my heart.

13. Unexpectedly getting to meet my editor (Bryan Norman) for my book, Say Goodbye to Survival Mode. He poured so much into that manuscript and I’m eternally indebted to him. So it was very special that he surprised me and showed up for my talk at The Platform Conference. I’m just sad I forgot to get a picture with him!

14. The encouragement, love, support, and cheerleading from Jesse. I’m so blessed to be married to him! He had to pull a LOT of extra weight this week while I was finishing up my manuscript and prepping for two conferences and he did it all so willingly and graciously. I owe so much to him!

Cutting Back on Caffeine (whose idea was this anyway??)

Cutting back on Caffeine

So, I’m working on cutting back on caffeine this month, as part of the 12 Months to a Healthier You Challenge. And yikes, this is harder than I thought.

I switched to only using cream or half and half in my coffee a few months ago (I know, no sugar, people! Can you believe it??), but I do love me my coffee.

However, I’m determined to follow through with this challenge, so I’ve cut back to 1 and 3/4 cups per day instead of my usual two cups. I plan to slowly keep cutting back until I’m at 1 cup per day by the end of the month.

I’ve already decided this may not be a habit I decide to stick with. Because coffee is one of life’s little pleasures to me and something I savor every day! 🙂

P.S. Pictured above was my lunch today. I “Trim Healthy Mama-fied” the Blueberry Crisp from Bread & Wine and it is SO good! I cannot believe how much I love this way of eating… I never thought that sweet-tooth, carb-loving me would survive without sugar and lots of carbs. But I’m not just surviving; I’m thriving — and it’s been five months now, so I think we might be able to officially declare it a lifestyle change??

12 Months to a Healthier You: October’s Challenge


For September’s 12 Months to a Healthier You Challenge, we focused on clearing out clutter. I committed to spend 30 minutes to an hour every week de-cluttering at my house. Here’s an update from my last 30-minute decluttering session:

30 Minutes of Decluttering

I cleaned clutter/trash/things that didn’t belong out of the car. Um, I’m sort of embarrassed to show you the sack I brought in from the car.

Yes, that whole entire thing was stuff in the car that was either trash or didn’t belong in the car. Yikes!

October’s Challenge is to cut back on caffeine. And I kind of groaned when I saw that’s what it was. Because I love my two cups of coffee each day!

But I’m going to try to slowly cut back to one cup of coffee per day just to see if it changes how I feel or my sleeping patterns or anything. And also just because I think it’s good to challenge myself to things like this on occasion (yes, you can call me crazy!)

My Reading Challenge for July

I’m hoping to read at least 20 books in July.

I’m also hoping to keep up with January’s habit of exercising at least 4-5 times every week, February’s goal of eating a big salad at least six times a week, March’s goal of drinking 8 glasses of water a day, April’s goal of cutting back on sugar, May’s goal of getting at least 7.5 hours of sleep every night, and June’s goal of sticking with my morning routine

This Week’s Progress:

I read 4 books last week — yay! That’s progress over last week’s 2 books. And since we’re taking a roadtrip this week, I’m hopeful that I’ll have time to read even more. We’ll see!

I hit my water goals six of the days, ate a salad six days, got around 8 hours of sleep almost every single night (woot!), did a fairly good job of sticking with my morning routine, exercised 4 times, and had dessert once. I’m so encouraged with how these challenges are actually turning into true habits for me — and hopefully lifelong changes!
