I find a lot of great ideas on Pinterest… but pinning something doesn’t do anything unless I actually, you know, try the idea. So I thought it’d be fun to challenge myself to do at least one Pinterest experiment every week — and blog my results.
I can’t promise that I’ll always have a Pinterest Experiment post up each week, because you know how I sometimes get distracted or on blog tangents. But I’m at least going to try. By the way, you can follow my Pinterest account here, if you’re interested.
I promised to tell you how the Cookie in a Cup Experiment went… and I’m happy to report that it was a success.
It was super easy to whip up. It probably took me about 3 minutes from start to finish.
It turned out beautifully and tasted delicious. Though I have to say that it would have been even better with a big scoop of ice cream.
One thing I loved about this recipe is that it just makes a small amount — the perfect little dessert to share amongst two people (especially if you have that ice cream!). It doesn’t make much of a mess. It doesn’t heat up your house. And you don’t have three dozen cookies sitting around begging to be eaten later in the day. 🙂
I definitely liked this recipe better than the Chocolate Chip Cookies for Two recipe I made not too long ago. But if you want to make a larger batch of cookies ahead of time and aren’t worried about them disappearing and don’t mind using your oven, I highly recommend this Chocolate Chip Oatmeal Cookie recipe.

These were delicious! I made them last night for me and my husband and we both enjoyed them. And to not waste any ingredients, I used the leftover egg whites to help make my toddler’s dinner.

I’ll have to try this! I almost always end up liking your recipes. I’m hoping you can help me out with one. When I was first married, I came across your Ritzy chicken recipe on your old blog. I haven’t made it in a long, long time (we were gluten free for a while), but hubby is requesting it, and I can’t find it anywhere! Do you have a link to it? I would appreciate it so much!

Speaking of cookies, we tried a recipe from pintrest the other day for Cookie Dough Popsicles…so good and bake free, great for the summer months and since they actually don’t have any cookie dough in them they aren’t “that bad” for you! :O)

I’ve been making paleo mug cakes and brownies for myself. I don’t like using the microwave but sometimes I compromise… 😉

My first try with this didn’t end up with a cookie… but it was a success! First off, I had no brown sugar, and I wasn’t about to get out the molasses to make a whole tablespoon, so I compensated with more granulated sugar. THEN I accidentally added the whole egg and wasn’t able to separate it (I’d already added other ingredients to the cup). So to try and balance it out, I started adding more of other ingredients. A little more sugar, a pinch more salt, more flour… and in the end I had a chocolate chip cake! It’s delicious, I even prefer it to the cookie version (which I’ve since made successfully).
Here’s my adapted recipe if anyone would like to give it a shot:
1 tablespoon butter
3 tablespoons granulated sugar
1/4 teaspoon vanilla extract
pinch of salt
1 egg
a very scant 1/2 cup of flour (7 tablespoons if you’re trying to be exact)
as many chocolate chips as you want
Mix the same way as the cookie and microwave for one minute. Sometimes, depending on your mug, the cake will even do a fun thing where it rises out of the cup! But it’s not going to overflow, just let it keep going!
Mine ended up being a nice, fluffy, moist cake. Not dry at all!

I just made it with Cup 4 Cup, traded out the 2 T of sugar for one packet of Truvia and used dark chocolate and mint morsels (it’s what I had on hand) and it turned out really delicious. Particularly delicious with a scoop of vanilla ice cream. 😉

I should note…Cup4Cup is a gluten free flour blend and it worked well.

You should be able to make this with gluten-free flour. I made it with that and it turned out well. {I’m no longer gluten-free, but I had some gluten-free flour to use up so I used it on this!}

Just tried this recipe and it was GREAT! Even my hubby liked it. The only thing we changed was using whole wheat flour and a couple of extra Kirkland dark chocolate chips (the more chocolate the better according to my hubby).
Big hit in our house.

I think any microwaveable cup or mug should work. I just used a coffee cup.
