Local Farmer’s Stand
We stopped by a local farmer’s stand over the weekend and ended up getting several things. These tomatoes are some of the biggest I’ve ever seen! I’ve also never made fried okra before but thought it might be fun to try!

Cut your fresh okra okra into 1/4” or 1/2” rounds. Put them in a bag of cornmeal and shake. Pan fry/sauté using just a little vegetable oil. It’s the best and easier and healthier than breading and deep frying. Salt and pepper to taste.

I buy boneless skinless fresh chicken breasts at Target in a family pack for $1.99 a pound. They are large, clean and delicious and I freeze wrap them when I get home. I live in South Florida and prices everywhere else I shop are much higher.

Could you share your spinach smoothie recipe? We’ve been looking to try one!

Sure! I usually throw in 1 banana, 1/2 apple, 1/2 orange, 1/2 cup greek yogurt (or plain yogurt), 1 heaping scoop of collagen and then fill it to the top with spinach. Sometimes I’ll add in some frozen blueberries if I have them. This is my breakfast every morning. It’s fast and easy for this on-the-go mama and my little boys usually end up eating some of it, too. 🙂
