Well, I didn’t end getting everything crossed off my long Baking Day list, but we did get four bags of rice cooked and frozen, salmonettes made and frozen for quick lunches, Healthy Harvest Pumpkin muffins made and frozen, Cranberry Wheat Muffins made and frozen, and Pumpkin Apple Harvest Bread and muffins made and frozen.
And hopefully that will tide us over in the quick snacks and breakfast department for a little while. Though at the rate I’m eating these things, I’m not sure sure if they will be lasting very long. 🙂

you make and freeze rice? That’s a good idea… How do you defrost it to use? does it get dry at all?

I almost always bake more then one thing at a time! Just saves so much cleaning up to do two or three things at a time!

Ladies, I would like to know the following for freezing baked goods:
1) How should you prepare to store in the freezer–bags? tin foil? Method of prep info would be great.
2) How long do items “keep” in the freezer?
3) How do you thaw them for best results?
I have been wanting to bake and freeze so would love some additional insights.

My children and I had a baking day and reading day yesterday for homeschool. We made sweet potato muffins & apple-carrot- banana bread. We talked about basic fractions. I also got cornbread mix ready. Did not get to the granola bars… maybe later in the week. I hope to finish my Thanskgiving shopping today so I have all my ingredients on hand. In order for this to happen, I need to CLEAN OUT THE FRIDGE!!!!! One nice thing is that we are so well stocked that I do not need to buy much else for the week. And with leftovers we will be covered for another few days.

While I am not doing a baking day, I am doing a cooking day. I am trying to cook several main and side dishes on Saturdays for the upcoming week. With 11 people to feed, it is such a help to have several lunches and some supper items already prepared.
I know this isn’t a new idea, but it is just now really working for me!

My 14 year old spent yesterday afternoon making a quintuple recipe of whole wheat pumpkin spice belgian waffles. This will give us 2 or 3 breakfasts.
I spent last night grating apples, carrots and zucchini to have in the freezer for easy zucchini bread and apple, carrot, blueberry muffins. I was going to make these yesterday, but the grating and freezing of the produce was all that happened for those recipes.
I used to keep all of those items grated and frozen in my freezer in 2 C quantities for convenient thawing and recipe uses. I’m working on getting that part of our freezer stock back in order to facilitate baking days. Wishing my Cuisinart Food Processor hadn’t bit the dust!

Funny. I got the baking bug yesterday too. We just got home from vacation, and I haven’t even unpacked, but I felt a need to bake. 2 zucchini breads, a batch of Hello Dolly Bars, and several dozen Kolacky.

I really like your baking day idea I would like to try this, but my oven went out. We will be getting a new one soon, until then I am trying to use my crock pot creatively and last night we had apple crisp in it. I was happy that it tasted really good.

A few weeks ago, we were blessed with an overabundance of apples. My children and I enjoyed baking together, and not only stocked our freezer with breakfast treats, but with a few pies for Thanksgiving as well.
