Crystal, Gretchen’s menu for the week sounds delicious. Do you or Gretchen have a recipe for the Chicken Noodle Casserole? I’d like to add this to our rotating summer menu since it sounds like it’s a good make ahead dish. I came up with a meatless healthy make ahead menu for our family. Since it’s too hot to put the oven on the summer, let alone in Florida, I like to make recipes in the evening or a rainy day and freeze. Thanks Crystal!

Hi Deedee! I don’t really use a recipe. Most of the time, I cook 3-4 chicken breasts and shred it. Then cook 1 pkg of noodles (whatever I have on hand); combine the chicken and noodles and add in 1 can of cream of chicken soup (or make my own), about 1/2 cup of milk, 1-2 cups of shredded cheddar cheese, salt and minced onion. Pour into a pan and cover with shredded cheese. I will either freeze it like that or cook it at 350 degrees for 30 minutes. The ingredients and measurements vary each time depending on what I have on hand, but it’s such a budget friendly meal and super easy to make! I hope that helps! -Gretchen
