    Usually I make my mother’s famous Bratkartofeln (home fried potatoes).

    I grew up eating yummy potato cakes. My mom would take leftover mashed potatoes and add an egg, flour, and milk. She would cook them just like pancakes and we dipped them in ketchup. Super yummy! We looked forward to the morning after leftover mashed potatoes! We never wasted food in our house- mom was frugal years before it was cool!

    I like to make hash browns out of leftover baked potatoes. I have a hand grater and it’s quick work to shred up a potato or two and fry them up in little mounds in a skillet. There’s no need to peel them either, the peel kind of stays together and acts as a buffer between you and the grater, and you can even fry those up if you want!
