And those of you who aren’t gluten-free? This recipe is for you, too. It doesn’t contain any specialty ingredients (because I realize that not everyone keeps xantham gum in their pantry), and no one will ever guess these soft, fragrant muffins don’t contain any wheat. My family can’t get enough of them!

I’ve tried – and liked – many different granola recipes over the years, but this is my go-to recipe every single Christmas. Packaged with a Christmas bow and cutesy label, it makes a perfect homemade gift for teachers, neighbors and friends. In fact, certain of my family members and friends have come to expect (demand??) this granola from me every December!
It’s Pumpkin Week here and we’re starting things off with this new-to-us Pumpkin Oatmeal recipe. It was very simple to make — and it was very filling, too. Best of all, it is packed with lots of nutrition… the perfect way to start off a crisp Fall morning.
I did a quick freezer cooking session last night while making food to take to our church’s covered dish supper. I was in a bit of a hurry and a little scatter-brained since I got a late start, but within 35 minutes I managed to pull together five different dishes to take to the church supper plus make some barbecued meatballs and homemade instant oatmeal packets for the freezer.
