I just realized I forgot to post about my recent Freezer Cooking in an Hour session! As happens often, I had a very willing and eager helper! 🙂
We mixed up the Cornmeal Pancakes together. I was surprised that the recipe didn’t call for any sweetener! Despite that, I thought these turned out really well. They were beautiful pancakes with a great texture.
Then, I supervised while Silas helped make some of his own pancake creations. He had so much fun — and he kept excitedly telling me what shape each one was. It cracked me up what he came up with — from a rocket to an elephant and more!
Oh, how I love this boy! He is not only so precious, but he guarantees that there’s never a dull moment at our house. 🙂
I also mixed up a batch of our favorite Homemade Pizza Dough. This is SUCH a great recipe. If you’ve not tried it before, you must. The best part about it is that it freezes so well!
The Cinnamon Sugar Oven Pancake was sadly disappointing. It just didn’t taste all that delicious. I guess that’s maybe because I much prefer traditional pancakes?

I hosted a “freezer meal prep party” for friends and one of the meals we made was a honey sesame chicken recipe for the crockpot. Cooked mine this week and it was AWESOME!

I have been freezer cooking on Sunday afternoons lately. I cook up three big meals while catching up on podcasts I like and then I put at least a serving of each in the freezer and then let everyone pick which one of the three they want for dinner that night. The rest go in the fridge for my hubby to bring as lunch all week and for the kids and I to reheat for dinner (hubby works odd hours). The three in the freezer add up until I have enough to cover a week for my husbands lunches when I do that week I spend my session baking up a storm for the freezer. Seems to be working well freeing up and hour each day during the week.

Crystal, can you tell me how you freezer your pizza dough? We use your pizza dough recipe all the time but haven’t had any luck at all trying to freeze it! It always ends up what I’d imagine eating stiff cardboard would be like… 🙁

I’m so sorry the oven pancake was a disappointment! It always bums me out when people use good ingredients on one of the recipes I share and then don’t enjoy it. 🙁 I’m wondering if maybe I just loaded on more cinnamon and sugar? Yours looks different to me, but that’s all I could come up with. Either way, my apologies for sharing a dud!

I recently started making oven pancakes too, using my pancake recipe that is fairly similar to yours w/o the cinnamon sugar. We like it a lot, but I’ve wondered if others would like it as much, only because the texture is a bit different than traditional stove top pancakes.
I make it sometimes just to save the hands on time of flipping pancakes for all the hungry boys in my house.
Anyway, I too hate it if I share a recipe and it doesn’t turn out the way someone hoped, and just wanted to encourage you that we do like this recipe/method.

I’ve made the oven pancake twice now and my kids LOVE it. My 5 year old even wanted for her birthday! The only thing I did different was use buttermilk instead of milk because I had some I needed to use up. And I used a bigger pan( half sheet size). The first time I made it, it over flowed in the oven 🙂

No worries at all — it was a fun experiment. I was wondering if maybe it was because I used turbinado instead of regular sugar for the topping? It seemed to sink in and bake funny as a result. So it likely was my fault for switching up ingredients… you’d think I’d learn my lesson by now!

I have made the oven pancake and all 3 of my kids ate it (which is not an easy thing to accomplish). We did put some syrup on it as it turned out a little dry. It was very easy to make and allowed time for me to make the kids lunches while it was baking. Love that.
