We are blessed to have many friends who share from their garden abundance. We’re always happy to take the extras off their hands. And nothing beats fresh-grown tomatoes!
I love it when I can quickly run into the store and come out with some great bargains (thanks to my friend, Angie, for texting me about these deals!).
We can’t seem to have too many library books around here! Here’s our stack of books we read this week! Oh how we are thankful for the library and the money we save because of it!
You might not be able to tell what the above picture is, but that’s two hunks of frozen pizza dough. We save so much money by making our own homemade pizza. And whipping up a couple batches of Homemade Pizza Dough for the freezer makes it even easier to pull off dinner on busy days!

We really should use our library more often. We are spoiled when it comes to books my mom-in-law is a librarian and she keeps us in a good supply of books. 🙂
Our garden is finishing up for this year, we just have a few peppers, carrots and zucchini left now. I’ve enjoyed all the free produce we get from our garden.

I love the library books comment. We read 4 books every night before bed with our 4 year old. The librarian loves when we come because we check out well over 30 books at a time!

I’m curious if any of your readers have had success making gluten free breads with a bread machine. I would love to make pizza dough, etc in batches and am considering investing in a nice machine. I’m just a little concerned about spending all that money if it doesn’t work well for GF recipes.
Help appreciated!

We make pizza dough out of cauliflower. It’s DELICIOUS!!!
Ingredients:
◾1 cup cauliflower
◾1 cup mozzarella cheese
◾1 egg beaten
◾½ tsp garlic salt
◾½ tsp oregano
Directions:
1. Trim off any parts of the cauliflower that have brown spots along with the leaves and stalk.
2. Wash off the cauliflower and shred all of it — including the white stalk — just like cheese.
3. Pile the cauliflower into 1 cup sections.
4. Place each section into its own microwave safe bowl and heat for 15 – 30 seconds depending on your microwave. It should be steamed and slightly moist. Don’t add water to it, the cauliflower has enough in it already.
5. Mix the cauliflower, egg, cheese, oregano, and garlic salt into a bowl. Place the mix onto a foiled and greased cookie sheet. Flatten it out into a circle/square pizza shape and bake at 450° for 15 minutes. After it cools, slowly peel the cauliflower off the foil and add whatever toppings you want! Repeat directions for each pizza.
To Freeze:
After you’ve cooked the crust, let it cool off for a few minutes. Move the pizza crust into a Ziplock bag while keeping it flat. Place the crust on a flat surface in the freezer until completely frozen. Once it’s done freezing you can stand the pizza crust up on its side to save room. When you’re ready to eat it, let it thaw out or heat it up in the microwave in 1 minute intervals until done. Add toppings and heat in the oven for 10-15 minutes at 350°.

Your pizza dough recipe is the bomb! I know this is silly, but I feel so accomplished to make our own pizza that looks just as good as the chains. And you’re right, it is a lot of savings. I also like knowing exactly what we’re eating. WONDERFUL!
