    Here’s are’s. It’s birthday week around here. So there is going to be a lot more cakes and cookies than “real” food. :) I did include some pics of past fun cakes I’ve done though.

        Thanks. It’s the youngest turning the big 5. But birthdays are my favorite. Mixed emotions about the baby turning 5.

        And I love auto-correct that turns ours into are’s! Is are’s ever grammatically correct? I don’t think so…..

    This week we will be eating some easy skillet meals, a freezer meals and a few favorites. Those pull apart oat rolls look so good. I will have to give this recipe a try.

    I made a big batch of freezable meatballs last night, but none made it to the freezer :) Junior has a bunch of doctor’s appointments this week, so my menu is pretty easy. Still delicious and frugal though!

    My goal is to cook from the freezer and pantry this week and incorporate all my “free meals or desserts” for my birthday! I will be spending time with friends and extra dates with hubby!
    I really want to try making bread or rolls and am working on my irrational fear of yeast! I print recipes and dream… I even searched for over a year for a bread machine at goodwill! I’ve bought yeast and then gave it away.I did get a bread machine and have not used it yet! So my goal for April is to use the bread machine!!!

      Oooh, those Oat rolls look absolutely fabulous! I hate that I’m low-carbing it right now!! My goal for this week was to restock the freezer with the fabulous sales on frozen veggies and take advantage of the sales post- St. Patrick’s Day.

    When you say ‘fruit’ on all your meals, what types of fruit do you do – especially to mix it up a bit? I have the hardest time incorporating enough fruit into our days.

      We usually buy 2-3 types of fruit each week — whatever is in season and/or on sale!

      We usually do at least 1-2 meatless dinners per week, I just ended up with a few more meatless meals than usual this week. But I guess we’ll make up for it a little with the steak one night. :) {Plus, the crockpot fried rice will have meat, too!}

    I saw your post about French bread last week and I am soo glad you are trying thefrugalgirl.com’s recipe! I use Kristen’s recipe all the time and love it. I don’t have a bread machine though, I use my kitchen aid and bake in the oven. Hope you love it like we do!

    I was really proud of myself last week. I planned for breakfast and lunch each day, as well as for dinner and more or less, actually stuck to my plan. :)
    This week, breakfasts are cereal, oatmeal, toast, buttermilk cinnamon bread, wheat scones. Lunch box lunches each day are wraps, sandwiches, or leftovers; fruit or veggies, various other side items. (My kids get a dessert in their lunch boxes on Tuesdays and Fridays.) Snacks are yogurt, nuts, seeds, peanut butter, crackers, fruit. Dinners are Monday: Sausage and Rice, peaches. Tuesday: Chicken Tetrazini, spinach. Wednesday: Enchilada Casserole, mexican rice. Thursday: Sweet and Sour Meatballs, rice. Friday: Tuna “Burgers”, Parmesan Noodles, Broccoli. Saturday: Salmon Quesadillas, guacamole, Plantains. Sunday: Cauliflower pasta (hubby’s favorite), sliced tomatoes.

    I JUST made those IHOP pancakes for breakfast on Saturday. I added 1 tsp. vanilla and used whole wheat flour, and I did find that because of the increased sugar content in the recipe that I needed to keep the heat on my griddle a bit lower so they didn’t burn. But we loved them! I make homemade pancakes at least once per week and haven’t yet found a recipe I’m totally happy with, but this one is definitely a top contender. Hope you enjoy! :)

    I made the rolls yesterday and they were a HIT!! I’ve been making my own bread ever since I saw your post earlier this year about saving $100 a year making bread. It’s become a bonding thing between my son and I every weekend. Thank you so much for the inspiration! I was ready to give that bread machine away because it hadn’t been used in years… so glad I didn’t :)

    Hi Crystal! Those oat rolls look amazing and I can’t wait to try them. I make buttermilk biscuits and homemade wheat bread, but have never done rolls. Yum! We had black bean soap tonight for the first time ever and it was pretty good. I also have a birthday at my house this week–my son turns 6. You should see these goofy cupcakes he wants (some Mario character). I linked to them on the meal plan this week.

    • Wholegrain pancakes with peanut butter spread on top

    Suppers
    • http://allrecipes.com/Recipe/Taco-Stuffed-Shells/Detail.aspx–I substituted ground turkey for hamburger, substituted rotini for shells, added one can chopped tomatoes on top, used 1cup cheese mixed in, 1 cup cheese on top of the tomatoes, & forgot the taco seasoning! :) It’s delicious!! It would be good with sliced olives &/or chopped green peppers in it, but I used what I had.
    • Italian mixed vegetables with tilapia
    • Kale Chicken Taco Salad with Homemade Ranch Dressing x2

    I just tried out the Slow Cooker Lentil & Black Bean Soup and The Frugal Girl’s French Bread last week! Both recipes turned out great. The Crockpot Fried Rice recipe is a favourite of ours. It is so so easy, and a great reason to cook extra rice to have on hand! I made Irish Soda Bread today for the first time, and I plan on making the Pull Apart Oat Rolls later this week. I’m looking forward to hearing how you like all the new recipes!

    I just made the IHOP pancakes since we had a snow delay for school. Wow! They were so good……..I was really impressed. My only problem is that my pancakes were very thin and I like them fluffy. I’ll be anxious to hear how yours turned out and would love anyone’s thoughts on why mine were so thin. Thanks! Michele

    I did not have buttermilk so I used the vinegar plus regular milk trick. Do you think that is the reason they were so thin?

      When I’ve made pancakes with real buttermilk, it has made a big difference. I found some marked down last week that I stuck in the freezer and that’s what I’m planning to use for these — so we’ll see how they turn out!
