Continuing with a dairy free diet for me, I am trying homemade coconut milk.

I am excited to make the recipe for Bruschetta Balsamic Chicken that I found again. Made it on Valentine’s Day and it was delicious and easy!

Is it sad that I waited for your menu to come out to copy it for the next week? :) I was at a loss with ideas/inspiration…having a cold doesn’t help…nothing sounds good! I have this week covered, but I will follow yours next week! Thanks for helping a girl out!

We’re keeping our menu pretty low maintenance this week, but we are having homemade pizza on Friday for our family movie night.

Looking at your bread machine, i am wondering if you are one of those people who likes to leave the original stickers/decals on items? My husband does that, but I do the opposite. :-) and I’m kind of jealous how often your family gets together, our families don’t make that a priority and I wish we did!

    • Crystal February 18, 2013 at 07:31 pm

Not usually, but the sticker won’t come off without leaving a gummy mess all over the place (I tried partially pulling it off!) so I’ve just left it on.

      • Michele February 18, 2013 at 08:50 pm

If you have some Goo-Gone, it should take the sticky stuff off.

      • Lana February 19, 2013 at 07:32 am

A paste of baking soda and water will remove sticky goo like that.

I’m trying to not buy anything, I when $10 over my budget bc of the awesome acme deal on raviolis and other foods. So I’m only cooking what is in our stock pile. Here my menu http://missy-lifeofaworkingmom.blogspot.com/2013/02/weekly-meal-plan-for-02182013-02242013.html

Here’s my menu for the week. http://wp.me/pQCuj-f1
I don’t plan out breakfast & lunch because my oldest kids are at school and my husband is at work. It’s just me & my 5 year old at home and we eat the usual lunch foods.
It’s always dinner that I have a hard time coming up with ideas if I leave it for that day, so I started menu planning more consistently a few years ago and it saves the day most days that I have a plan. :)

  • Sara@Save Money, Live Joyfully February 18, 2013 at 08:16 pm

Silas is getting so big. Such a handsome little guy!

My baby boy had surgery on Friday and isn’t allowed to sit in his jumperoo for a week. And he hurts rolling around on the floor. Which means our menu is super simple because I get to hold him all week! Sweet baby snuggles all week…I’m a lucky momma :)

I made Minestrone Soup last night, so we’re having that for a couple days, I have meat for tacos one night, and some manicotti and orange chicken from the freezer will round out our week. My husband came home early today feeling under the weather, so I took the opportunity to make up a quick batch of trail mix and wash some fruit for snacks for my 4 year old this week.

  • Jillian Kay February 18, 2013 at 08:47 pm

Silas looks like he’s having fun! Those brownies sound great too.

Here’s my menu. I have two old favorites from Cooking Light since my DH is trying to lose weight.

Eating out of the freezer several times this week because I need a low budget shopping week at the grocery- tonight was meatloaf, tomorrow Chili from the freezer, Weds. is Tortilla quiche, Thurs. is leftovers, Friday is Brown bag burritos from the freezer with chips and salsa and salad, and Saturday is White bean chicken chili from the freezer.

  • Holly February 18, 2013 at 09:05 pm

We are really trying to reduce our portion sizes and increase our veggies! So far we have lost weight! I think part of our success if is to meal planning and being more intentional about our food intake.

Here is this weeks plan: http://livinghappierandhealthier.blogspot.com/2013/02/goals-week-8.html.

  • Brenda February 18, 2013 at 09:29 pm

I have your hamburger vegetable soup simmering on the stove right now. It smells so good!

  • Carrie February 18, 2013 at 09:38 pm

Crystal, do you still grind up your own wheat to make your own flour? Now that we have moved, I have been wanting to do that. Do you recommend a grinder?

    • Crystal February 18, 2013 at 09:47 pm

      Yes, I do. Here’s the grinder I have: http://moneysavingmom.com/msm/2010/12/christmas-gift-guide-my-favorite-grain-mill-and-enter-to-win-one-too/

  • Michelle Murphy February 18, 2013 at 10:32 pm

Here is a link to mine for the week. I did real well last week making all our lunch and breakfast meals. I totally missed the boat on supper though. So this week I can try again right?

    Crystal,

Can you give me the recipe to your Vegetable Beef Stew in the crock pot please.

    Thanks!

    • Crystal February 19, 2013 at 07:28 am

I could, if I had one! I just threw some meat, potatoes, veggies, etc. in the crockpot, let it simmer for half the day, and called it stew. :)

      • Faith Still February 21, 2013 at 12:21 am

this is a great vegetable beef stew. I have made it many many times and my boys love it.

  • Sara Briggs February 18, 2013 at 11:44 pm

I made that same recipe for slow cooker chicken and broccoli. It was very good but was so mushy and almost like slop. Just a heads up :-)

  • Ashley @ These Precious Days February 19, 2013 at 12:19 am

I have 3 GF dinners on the menu, along with my kids’ favorite Double Chocolate Banana Muffins! Yum!! I am excited to try your new muffin recipe, Crystal! I think I will add blueberries. :)

We love to have soup this time of year too. We will be have Turkey soup made from one of my freezer soup kits and beef stew too this week. Along with a few of our favorites. I really should start planning some freezer cooking myself each week. Today having a loaf of French bread in the freezer to pull out for dinner was great. I just need to remember to make a plan to freezer cook.

    Here is our menu plan,

  • Lauren February 19, 2013 at 04:09 am

Crystal, what kind of bread machine do you have? Mine just died, and I would really like one with a horizontal loaf pan like yours. Hoping to find one second hand. Thanks!

    • Crystal February 19, 2013 at 07:27 am

Here’s the one I have and love: http://moneysavingmom.com/msm/2010/12/christmas-gift-guide-zojirushi-bread-machine-and-win-one-too/

My family doesn’t like to eat “wet” food back to back, so I have to be careful how I plan. I don’t ever stick to a day-by -day plan, but here’s my list of meal possiblities.

Breakfast: scrambled eggs with ham, oatmeal, cereal, cinnamon rolls

Lunch: chicken nuggets with carrots and dip, sandwich with fruit, leftovers

Dinner: Pork tenderloin sammies with coleslaw, swedish meatballs with egg noodles and veg., split pea soup, jambalaya, battered fish with fries and slaw

Possible freezer cooking; Meatballs, chocolate chip banana bread

    • K.S February 19, 2013 at 08:42 pm

Thanks for sharing the peanut butter chocolate chip blondies! I made them tonight and they were a HUGE hit! YUMMO!!!!:) I will be making these again and again.

      • Crystal February 19, 2013 at 08:49 pm

I’m getting ready to make them right now. Can’t wait to see how they turn out!
