    It’s funny that every single time I see “chicken enchilada casserole” on someone’s plan, I think about how amazingly good it sounds. Yet it never makes it to my menu plan! I’m going to remember that this time.

    I will be finishing out my January meal plan this week. I’ve already begun my work on my February meal plan…maybe I will go ahead and put the enchiladas on there now. ;)

    Had a weird week with the menu last week. Had a great menu prepared, hardly stuck with it at all but I guess that is okay, flexibility right. Love chicken enchilada casserole, will probably make that this weekend. My son from college is home, he eats about 1/4 of a pan by himself. Good idea, thanks.

    This week I will be making a stretch meal with a whole chicken. I love it when I can cook once and eat twice. I call the second dish new overs, because my family doesn’t really care for leftovers. :)

    We will also be trying the Taco Potato recipe you posted about last week.

      I love it too. I did a whole turkey I bought right before Christmas for $.69 lb last weekend and have used it in about 8 different meals. Not counting lunches.

    Just curious, when you have dinner with extended family, do you also cook for that or do you bring something, or is it at your house? Just wondering how you add all of that into the equation of meal planning, and budgeting. Or perhaps you do not take anything?

      We’re so blessed in that our in-laws and parents pretty much do all of the cooking! Occasionally, we bring something. But usually, they want us to come empty-handed. Yes, how amazing is that?!?

    I spent the weekend preparing food for my little one’s second birthday and also for this coming week since I had surgery yesterday. I didn’t get everything made I wanted to but I have a friend coming today to help me and she’s going to finish my cooking. I will be on crutches for 4-6 weeks and my husband will be gone all next week. Thankfully we’ll have food I can just heat up.
