    Thank you for including the muffin recipe in your freezer cooking round up. We are experimenting with going gluten free, and they were a nice change of pace!

    I just wanted to thank you for sharing the Banana Oatmeal Muffins recipe! I made them this weekend and they were a big hit! The only “change” I made was to use 1/2 cup honey as my sweetener, and add about a 1/4 tsp of nutmeg (I think I will add a little bit more nutmeg and go a little lighter on the honey next time).

    We’re having banana muffins as well! For anyone who is gluten free, this recipe is wonderful and you won’t tell the difference between gluten and gluten free. I make it into muffins (made around 30) instead of loaves and bake them for approximately 22 minutes. I also add dried cranberries and chocolate chips sometimes for something extra special.

    The twice baked Taco Potatoes sound really good. I may have to add these to my menu plan for next month. I am always on the look out for a good freezer recipe. I just added 5 pounds of cooked ground beef to the freezer this morning and I have 10 pounds of apples waiting to be made into applesauce. My crock pot broke so I will be making the applesauce on the stove top. Any recommendations on a good replacement crock pot?

    For our menu this week I will be using a few items from the freezer and I will be making some of my family’s favorites.

      Shelly – If I were buying a new one, I’d get one of the ones where the lid latches! I would love to have one of those since it seems we’re always transporting food to church dinners, school events, etc. However, I can’t justify the expense for me since I have three crock pots as it is. They were all gifts, though!

    Yay lasagna soup! My recipe has ricotta or cottage cheese mixed with Parmesan that is scooped in the bowl first. It’s very popular here! :)

    I was wondering what you do for your snack-y lunch? I have been making a menu for my suppers for quite a while but now I am trying to plan out my lunches too, cause I get tired of trying to find something in the fridge at the last second.

    We’re lucky to have received 2 boxes of strip steaks from my husband’s work, so we’re having steak one night, fish another night (which I had left over from a previous week and it didn’t get used), tonight we’re having Italian-sausage-stuffed pork chops and broccoli rabe, bread soup another night, chicken breasts on the grill and something with ground beef…either I’ll make a meat loaf, or I’ll buy a box of pasta for Bolognese or meat balls. I bought enough meat so that most nights it should provide leftovers for the next day’s lunches…but my 2 boys are suddenly eating us out of house and home, so we’ll see if that sticks!

    I have made the crockpot fajitas 4 times now. Each time they turned out bad. Too much liquid and mushy even when I didn’t add liquid. Tried it in the oven and it was great!

    Adding the Lasagna Soup to my list of “Recipes to Try”!! My family loves lasagna but I don’t always enjoy building one!

    We are having Fajitas as well but I came up with my own Fajita Kits for the freezer. The kids love them so much we have eaten them 5 times in the last 2 weeks! Their request!

    We also tried a new Pesto Chicken Pasta recipe that turned out so delicious! It was a very quiet (hard to get with 4 kids) and quick dinner! We all loved it and went back for more!

    I made the slow cooker lasagna soup for tonight’s dinner. Thumbs up from me and the kids (my husband will be home soon to try it!). I used ground turkey, added spinach a little bit after I added the pasta, and we put cottage cheese on top. Thanks for the link to the recipe! :)

    LOVED the oven tacos!! We’re not big crunchy taco eaters, much prefer the soft tacos so may try those next time.. but it was still quite good :-) So much better than just throwing hamburger in a pan and mixing it with the flavor packet.
