Freezer Cooking in an Hour: Brown Butter Banana Waffles, Crunchy Peanut Butter Bars, and Pancake/Waffle Mix

I did another freezer cooking in an hour session today. I had to split it up before and after swimming lessons (our kids have swimming on Tuesday and Thursday afternoons after school this Fall).

So I mixed up the dry ingredients for the Brown Butter Banana Waffles and put together the Pancake/Waffle Mix before we left.

After we got home, I finished the waffles and baked them. They were more time-consuming than most waffle recipes I’ve made and I didn’t feel like they were worth the extra effort — but I really think it’s because I decided I didn’t love the flavor of bananas in waffles. But don’t worry, with plenty of butter and syrup, we’ll have no problem eating them. :)

Since I didn’t have any muffin tin liners, I just made the Crunchy Peanut Butter Cups into bars. I think it was easier to do so and the bars turned out beautifully. Now if I can just have the self-control not to eat half of the pan in the next few days.

I’m going to cut up the Crunchy Peanut Butter Cup Bars and freeze them. And I’m thinking having one of these will be a perfect little pick-me-up at the end of a long homeschooling day. Peanut butter and chocolate… it doesn’t get much better than that! :)

    Did you use the sea salt? I think I could do without it since I’m not a salty/ sweet mix kind of person! They look really good!!

    I tried the brownies you posted last night. I topped them with homemade mint ice cream and ganache. For some reason I’m inn a “make everything I see mode.” Seriously, I see chocolate and want to bake. Anyways super yummy, quick and easy. I will totally be making them again!

    Since I picked up 5 pounds of ground beef at Safeway on sale I decided to do some freezer cooking today. I was glad to have all the other items in my freezer or pantry that I needed to make the meals. I made in about 2 hours with a break for lunch, brown bag burritos, beef and macaroni skillet, double batch of chili, and double batch of cheeseburger rolls.
    I also made batch of cream soup mix too. I am hoping to get some chicken dishes done tomorrow.
    My goal for next week after a shopping trip to Winco Foods for some things out of the bulk foods section is to make up some mixes, muffin, waffle, pancake and some dessert item mixes.

    It is so funny to me Crystal to read your blog and to see what a chocoholic you are! I am in the same boat and unfortunately I am raising 3 chocolate fans who think everything should have some chocolate chips mixed in. I thought about searching for more baking recipes with fruit, or substituting berries for the chocolate chips.

    I made two 9×13″ pans spaghetti pie. I also made Mexican Casserole plan to make a double batch of Salmon Cheese Potato Soup & put together three batches Ezekiel Bread Mix today or tomorrow.

    Not sure if this qualifies, but I made a huge batch of sweet potato baby food and banana baby food. I also made two meatloaves and two casserole dishes of macaroni and cheese for the freezer.

    I love peanut butter, but my son has a peanut allergy. I have never tried sunflower seed butter before, but I am considering it. Has anyone tried it? What did you think? Would it work in recipes calling for peanut butter?

      I used to babysit for a boy with a peanut allergy, and he and his mother ate Sunbutter all the time. She never really used it in baking, but it should work. It doesn’t really taste like peanut butter–it tastes like sunflower seed kernels rather than peanuts, unsurprisingly–but it works just as well for making a sandwich and I imagine it would be good in this recipe. The other flavors should actually make the fact that it isn’t peanut butter less noticeable.
