This week’s menu plan

A batch of Easy Dinner Rolls I made recently. I made the dough up the night before and then baked the rolls before breakfast so that it wouldn’t heat up the house too much!

We’re focusing on eating up all the produce and everything fresh we have in our house this week since we’re going to family camp in Texas next week.

Breakfasts

Oatmeal
Cereal
Strawberry Lassi
Scrambled eggs, toast, fruit
Chocolate Chip Oatmeal Cookie Pancakes

Lunches

Snack-y lunch
Peanut Butter & Jelly Sandwiches from the freezer x 2, veggies, apple slices
Leftovers x 2
Quesadillas x 2, raw veggies

Snacks

Chocolate Protein Truffles
Chocolate Chip Oatmeal Cookie Pancakes
Fruit/Veggies

Dinners

Dinner with extended family
Mixed Greens with avocado, tomatoes, chopped cheese, and salmon, fruit, rolls
Crock Pot Santa Fe Chicken served over rice, fruit salad
Grilled steak, grilled sweet corn, fruit salad, Homemade Bread in the Crockpot
Crockpot Rotisserie Chicken, Homemade Bread in the Crockpot, peaches, steamed veggies
Chicken Lime Tacos, fruit salad
Dinner out

    Have fun in Texas. I’ve never thought about making bread in a crockpot, I’ll have to tuck that away to try when we’re on vacation next week.

    Oh- do you get to go to PineCove family camp? If so, that’s so awesome! I know if we lived closer I’d totally take my family there! Have a great time. We are trying to stay cool here too! One day I’m going to try all your different bread/roll/pizza etc. doughs. I have this fear of yeast for some reason and I haven’t overcome it yet, although I did buy yeast at Sam’s club! Silly I know.

    I’ve been making a lot of meals in the crock pot and sticking it outside.
    Roast with veggies in crock pot
    Leftovers
    Turkey with veggies in crock pot
    Pulled pork from freezer, quinoa, green beans
    leftovers x2

      Yes! We’ve never done anything like it before and we were totally blown away by Pine Cove’s kindness to invite our family to attend one of their camps this summer. We’re quite excited!

    We’ve been so blessed by the inexpensive strawberries available at Aldi, and I’m hoping they bring them back soon so we can try the strawberry lassi.

    Is it sad that your menu and goals are my favorite posts each week?? Maybe it’s the type a mommy in me. Lists and order I do crave….:) It gets me thinking ahead for my own week too!
