    Oh darn, I was trying not to bake too much this week and then I saw “triple chocolate chunk muffins.” Well, I might have to now! :) We’re doing a few French themed meals bc part of our summer fun with my little one is beginning to teach her about “our world.” So this week is France :)

    Here is our food allergy menu for the week. We have a busy week with a summer camp & VBS, so we’re doing some eating from the freezer. I also make a little plug for freezer cooking in the post :)

    Excited to see you are making freezer fudge! It’s to die for, hope you love it as much as I do. And btw – I love the idea of making freezer burritos – I have a recipe I have been perfecting to use on my husband when I go out of town next week! Thank you for the inspiration!

    We are doing quick and healthy this week! 10 minute, 15 minute, and 20 minute meals start to finish!! And of course a couple of easy freezer meals!

    The mashed potato cauliflower bake sounds good. Eggs were on sale for $.50 a dozen and I think I burned my kids out on the boiled egg idea–LOL!

    We are at the beach this week, so we are trying to save money with utilizing the gas grill that we have at our beach house. So… We have brought many things from our home freezer to grill here…transported in a cooler with ice. It worked great since the beach is 3 hours away! We brought crystals worlds easiest frozen chicken, burgers/hot dogs, spare ribs, some steaks I found at a great deal and then we stopped by a farm stand and got corn, watermelon, some berries, etc. Sides were also brought from home….. Lunches are pb&j, crackers, frozen yogurt tubes….. We’ve budgeted 2 meals out…one was to a local pizza place we love on the beach and we will probably do seafood one night. We are really trying to be careful this year, because years past we’ve really overspent!!!!!

    All of my garden veggies are starting to come in, so I’m excited to do some freezer cooking with them. I was planning itall out in my head last night when I couldn’t get back to sleep after my cat woke me up!

    Now you have me wanting to try this freezer fudge. I make fudge and other candies and cookies to give away to our neighbors at Christmas each year but that is usually the only time of year I make it. I may just have to give this a try with the kids and see how we like it. I have a recipe for fudge that uses black beans in it to make it more healthy but I have not tried it yet. Maybe I should try out both and compare.

    What are you going to use for the sweetener in the muffins? I’m guessing you don’t use Splenda. Maybe just less turbinado? I’d like to try them.
