    I’ve been using Better Batter for 6 months and it’s been great, but I just ran out and couldn’t bring myself to pay $11 for 2.5 lbs again. I mixed up this flour and the bread I made is delicious! My son even ate it without complaint!

    This sounds like a great, all purpose mix. If I can I like to us GF flours that have higher nutritional value.. just because so many GF items do not.

    My favorite is:

    1 1/2 cups almond meal
    1/2 cup coconut flour
    1/2 cup tapioca starch or super fine (from the asian food store) rice flour
    2 tsp guar gum or xanthan gum

    Thank you so much for this. We, too, are now having to adjust our diets because our daughter who is now 4, but diagnosed at age 1, has type 1 diabetes. But she is now showing signs of possibly having celiac disease. (6 out of 10 Type 1 diabetics end up with this disease as well.) Thank you!

    We make our own as well. We order our starches from a GF facility in bulk and then we buy our brown rice from asian stores where it is cheapest and grind it ourselves. We save a lot. We also just switched to guar gum instead of xanthan gum which saves us a lot.
