I made some Pumpkin Spice Baked Oatmeal, and it’s baking away right now! I adapted it from the one you have here, substituting pumpkin applesauce for the butter, and adding some nutmeg. We’ll see!
I also am making Pumpkin Bagels…they’re rising while the oatmeal is baking.
Did you make the Broccoli Cheddar soup on your menu last week? I saw the recipe called for cardamom, but when I went to the grocery to get some, it was $15!! I didn’t buy any. For a small spice bottle….do you keep that on hand? Did you even add it to the soup?

We had muffins for dinner all the time growing up–my dad and brothers never complained. Jesse hasn’t ever complained, either, even if maybe it’s not the norm. I’m all about making our own traditions; who says we have to follow protocol?! 🙂
It helps if you serve especially yummy muffins, though, like Cinnamon Doghnut muffins or Pumpkin Chocolate Chip. 🙂

Oh we had muffins with dinner the other day to balance out the salads. I definitely don’t confine our menu plans to tradition. We have pancakes and eggs almost every Sunday for lunch, too.

Crystal, I saw you listed twice baked potatoes in your menu. Have you ever done those as part of freezer cooking? It works pretty well. I usually bake an entire 5 pound bag or more at a time,scoop them, mix the filling, then fill them and freeze until ready for them. Just curious if you have tried this, or if you have a faster way that you make them on a weeknight.

Do you have a recipe or just look on all recipes or something for a twice baked potato recipe then freeze it? I have never made them, I know my mom did when I was a teenager at least once. though.

I bake the potatoes and let them cool. Then slice them length-wise and scoop out the middle leaving a little bit of the potato behind so that the skins don’t fall apart. I mix the potato with sour cream and shredded cheddar cheese or sour cream and some onion soup mix (you could also add cooked, chopped bacon – or anything else you want!). Then fill the potato skins up and bake or freeze. I bake them at 350 until heated through (sorry I don’t have exact times).

I tried the Pumpkin Scones, BUT I did not have any pumpkin. SO, I substituted it for some Apple Spice packets I had made and froze. These were the BEST scones I have ever eaten!!! I want to try the pumpkin next. Not sure if I could do OAMC with them though. One batch and it was gone in a day, mind you we have a 3 1/2 year old and a 1 year old, so not like they are eating them. But I have a link on my site to the adaption I made to the recipe. Thanks!!!

We have a crazy week with both hubby and I taking a seminary class right up until lunch time every day. I planned for us to eat simple things in the car together before he heads to work right after class. I was really stretched to think ahead more than I usually do and have everything planned and packed when we head out the door at 7 am!

I posted my Pumpkin Pancakes recipe (similar to yours above) as my “Must Try Monday” dish today. They turned out really good. How were they reheated from the freezer?
I have “baked oatmeal” on my “to do” list for this week. I think I’ll try the pumpkin one you have here. I”ve never made baked oatmeal before. Have you? If so, how do you keep it (refrigerator, etc.?) And do you rewarm it before serving it? I can’t wait to see what you think of making your own pumpkin tomorrow. Have a great day.

We call the haystacks Fiesta Salad. We usually make it as an extended family project, and everyone brings one of the ingredients. We also use green olives, flaked almonds, chopped pecans, and shredded coconut.

I love that you incorporate your freezer cooking into your meal plans. That might sound odd, but I keep freezer cooking but then I get stuck thinking I shouldn’t use a freezer meal unless I’m too ill or busy or tired to cook and not just accept a meal off from cooking (other than leftovers of course).

I can’t find canned pumpkin in any of our stores – they said there is a shortage from all the hurricane/rain/flooding we have had. Very sad. Maybe I should check Amazon since I really want to try these recipes. I did sub out cooked mashed sweet potato today for a pumpkin muffin receipe I had and it turned out delicious.

Heather – We noticed that same problem in our grocery stores. You can roast your own pumpkins though. We did it for the first time this past weekend and it’s super easy. I have a short post already up on how to do it, but plan to do another post this week with pictures and more details.

I have 7 sugar pumpkins in my garden so I’m definitely looking up your pumpkin recipes! I wrapped up my freezer cooking for Sept and feel like I really got a lot accomplished last month. I love your menu plans – I always get a new idea (or 2 or 3)! Tonight we went super cheap and simple – a potato bar and a loaf of homemade garlic bread. I just set out the toppings (butter, sour cream, salsa, cheese, green onions and crumbled turkey bacon) :9.. I bought a 2 lb block of extra shart cheddar cheese (with coupon!!) and have been shredding it myself and I’m surprised at howlong it’s lasting – I think that’s my new money saving idea. I got the extra sharp so I would be able to use less and still have great taste – yum!!
