I just made this yesterday and it is wonderful, but a cup of olive oil is quite a bit. Olive oil is pretty expensive, but it does work really well on hands and feet. The recipe I used was 1 c olive oil, 2 1/2 cups granulated sugar, and 4 tbsp lemon juice. I can see where the lemon extract would work better for a better lemon smell though.

It lasts for a couple of weeks, but if you use essential oils instead of Lemon Zest it will last almost indefinitely.

I would personally use lemon essential oil but be careful regarding the amount. Too much can be way too stimulating.
Also, the author made the comment that salt can be drying, but you wash it off and the oils stay to moisturize… The salt is merely used as an abrasive and in small quantities is a water softener.
