Sorry, but the link isn’t working for me!

Sarah July 5, 2011 at 9:33 pm

Link worked for me… I wonder if it’s tart or sweet.

TERESITA BABCOCK July 5, 2011 at 9:35 pm

Never mind, I got it.

I’ve done this quite a few times. Learned it from Ina Garten’s show. I mix it with honey & freshly-squeezed orange juice, then top with fresh berries & granola. Sounds like dessert but it’s really just breakfast yogurt!

Made this before and made cheesecake with it. YUM!

Sorry, but this made me laugh. Cream cheese? Try greek yogurt. I’ve been eating this stuff since I was a child.

Cream cheese or greek yogurt, it’s delicious stuff.

This I have got to try! The amount of cream cheese and bagles my boys eat you would think they were Jewish! LOL

Wow, it really is EASY! I’m thinking of adding cinnamon and sugar for my breakfast bagels.

This is indeed strained yogurt. You can make cream cheese, neufchatel, more likely, and there are instructions online. When I did so, years ago, the cultures came from buttermilk, I used rennet, Junket brand from Safeway, and the process was more involved. The end product was tarter than the commercial type.

yeah, this isn’t cream cheese at all. This is drained yogurt, which is called yogurt cheese. It will not be as creamy and will be more tart and acidic than cream cheese.

Yeah, I assumed this would be how to make ACTUAL cream cheese, but it’s really just strained yogurt. I do this all the time just with a clean bar towel and a strainer over a bowl in my fridge overnight. I then use the yogurt as you would greek yogurt or, this is really cool, as a substitute for sour cream because of the tartness. Try it on baked potatoes. You will not want to go back to eating sour cream on them :) .

I agree, I think it makes a great sour cream substitute! :)

I strain my kefir for this same purpose… but strained kefir or yogurt is just not the same as cream cheese, cottage cheese, etc.! ;)

Tried this but it was as if my yogurt wasn’t runny enough, it just stayed one wet clump.
