Last night my Aldi had 3# pound bags of sweet potatoes marked down to $.59, so I only spent $.20/lb! I ended up baking all of mine last night and then mashing them and freezing them. By doing it that way I didn't have to peel them until after they came out of the oven and after you let them cool the peels basically just fall off.

Yes, how are you freezing your sweet potatoes? Our WM has them for $0.19/pound and I would love to get some and freeze them away. Thanks!

our walmart has them for 15 cents a lb!!! I picked up almost 20 lbs!! How are you making casseroles then freezing them? Boiling them then freeze them, or just cut them up then freeze them?? I have never done it before but we love sweet potatoes so I could use any ideas!

Don't forget to make some baby food out of the sweet potatoes, that's what I did and my baby isn't even quite ready for solid food yet.

You're not actually peeling them before you boil them, are you? It is WAY easier to boil first, then the peels just slip right off. You probably are, I just want to make sure (and save you some time and effort if you're not)! I love baking them even better before I peel and mash them. Gets the same results with no extra pot to wash at the end.

Wow, great shopping trip, Crystal! I have never managed to get free tp in my life...sigh...no double coupons around these parts!

I also loaded up on Walmart's sweet potatoes this week and got two more .40/lb. turkeys to stash in the freezer. Would have gotten more but my freezer is stuffed :)
