I think it might have something to do with having more surface area with the potential to be contaminated with bacteria. Thus, I never buy the shredded cheese anymore. Shake the flour around to barely coat the cheese and this keeps it from freezing into one giant block. I never taste the flour, just the yummy fresh cheese.
