After a few crazy weeks of pulling off a wedding and going on vacation, we're ready for life to slow down here and move into a more normal routine. We do have a big garage sale planned for next week, but I'm having lots of help with that so I'm hoping it's not a huge amount of work to pull off!

We were blessed with some fresh-from-the-garden tomatoes, cucumbers, and corn on the cob so we'll be incorporating that into our menu for this week.

Here's what's planned for this week:

Breakfasts
Cereal, orange juice
Banana Strawberry Blueberry smoothies, toast
Blueberry Bran Muffins (new recipe which I'll be posting soon), scrambled eggs
Cereal, fruit
Oatmeal with brown sugar, fruit
Brown Sugar Biscuit Twists, fruit
French Toast, turkey sausage, fruit

Lunches
Homemade Pita Pockets with melted cheese, carrots
Baked Potatoes, broccoli, cheese
PB&J, cantaloupe, carrots, cookies
Spinach, brown rice, and cheese casserole, cucumbers
Leftovers x 2
Lunch at friends' house

Dinners
Lasagna Bake, Homemade Bread, Broccoli, Cherry Crisp (my mom made this for us–yum!)
Homemade Barbecue Beef Pizza, cucumbers and tomatoes
Layered Nacho Dip, chips, corn on the cob, cucumbers and tomatoes
Dinner out
Office Party–dinner provided
Grilled steak, baked potatoes, corn on the cob, fruit
Steak and Cheese Calzones, peas, fruit

Snacks
Protein bars
Blueberry Bran Muffins
Cheese/crackers
Fruit/Veggies
Chips/Salsa
Cereal
Popcorn

ummm….Lasagna Bake sounds yummy…do you heave a recipe. I have been discussing a weekly menu with DH – he is not quite sold on it yet, but I am working on it. SInce he is the stay home Dad (and prepares lunch and dinner), I really need him to be sold on the idea so we actually stick to it.

Do you have any freezer meals? This way I could make our meals over the weekend so all he’d need to do is heat them up!

We have started putting a handful of Spinach in our smoothies…
along with 1/2 cup water
handful of fruit (blueberries, strawberries, mango, whole peeled orange)
and a banana

It turns the smoothie green but you can’t taste the spinach! And it’s thick and yummy!

I don’t know what I’d do without my weekly menu. I feel lost. Making a menu helps me know what I’m making for dinner, what I have for lunches and breakfasts and by making it, I stick to my grocery budget.

Hi! I really like this idea of menu planning but I have NO idea how to start! We have allergies, wheat, gluten, and lactose and this has completely stopped me from cooking :-( Does anyone know if there are menus out there that would help me??

I totally admire your organization and ability to put together a whole weeks’ meal plan! I hope I find that kind of motivation when little ones come along. Can’t wait for the blueberry bran muffin recipe!

Money Saving Mom here: Nope, you’re not doing anything wrong. We bought the protein bars for free on that Dillons trip, that’s why I linked to it. :) We’ve been eating them rather often around here the last few weeks because I bought so many!

Shelby,
My husband’s son was on a gluten and casein (milk protein) free diet for years and I found that there were substitutions for almost everything and thankfully they’re becoming more readily available, although still a bit expensive. I don’t know if there are complete menus but it’s pretty easy to find allergy friendly recipes online. If you’re not having luck searching under gluten and lactose, try typing in GFCF (gluten free/casein free), which is a fairly common combination in the autistic community. Since they’re dairy free, most won’t contain lactose. If you’re willing to experiment, it’s also pretty easy to adapt regular recipes just by switching out a couple of ingredients. Here are a couple of meals off the top of my head that should be okay and for the most part they just use things found at a regular grocery store.

What about:
Breakfast:
Rice Chex with rice or soy milk and fresh fruit
Bacon and eggs
Omelets with ham, peppers, mushrooms, etc.

Lunch:
PB&J on gluten free bread with Lays original flavor potato chips and carrot sticks
Hot dogs, sliced instead of on a bun with fresh fruit and homemade peanut butter cookies (1 cup of peanut butter, 1 egg, 1 cup of sugar, I’ll have to check the baking temperature/time and update later)

Dinner:
Chicken breast cooked with olive oil, garlic and other spices with rice and pretty much any vegetable
Original flavor Prego sauce and ground beef over rice or corn noodles and a salad with olive oil and vinegar for dressing

Snacks:
Corn chips (check the labels) and homemade salsa
Popcorn (buy the kernels and pop it yourself in oil)
Fruit and veggies
Philly Swirls frozen treats or popsicles (you could even make your own with juice)

Just wanted to let you know that I tried to use the coupons for the Nature Valley Granola bars at Kroger today in Bay City Michigan that you mentioned in your e-mail yesterday. They would not double any of the coupons you had linked to and stated that their policy was to not double internet coupons. I was surprised and wanted to pass the info on.
