I always substitute the oil w/ all applesauce and use 1/2-3/4 c sweetener - honey, molasses or brown sugar depending on my mood. I often add a mashed banana, blueberries or apples and often drizzle molasses over the top to give it a prettier look. I have also made it like normal but put in muffin tins and made muffins instead of a pan. It seems to keep nicer and is easier to serve again the next day.
